March 2011: San Antonio at green vegetarian cuisine & coffee

Mike Behrend, co-owner and chef at green vegetarian cuisine and coffee, spoke to attendees on “Sustainability in the Restaurant Industry.” The restaurant hosted us in their side garden courtyard and provided some healthy and delicious appetizers.

green is the only 100% vegetarian restaurant in San Antonio, and it is also the way they do business. Come learn how Mike and his mother Luann Singleton retrofitted an old, outdated building into a vital community gathering spot that helps set the standards of what is possible. Mike also gave us a tour of green’s gardens.
